Proteins Proteins are essential for the body, they help repair and build muscle. Protein is found in bread. Many times, very little protein is found in bread.
This is a nutritional label from Nature's Own Honey Wheat bread. As shown, there are only 3 grams of protein in one slice. Which is not a good source of protein. As stated eariler, glutenin and gliadin are combined to make gluten. Also, gluten is protein! Which means when water is added, the proteins form a network combined with hydrogen bonds.
Carbohydrates There are two different types of carbohydrates, simple and complex carbohydrates. Simple carbohydrates are carbs that one have two sugar molecules, and have a quick form of energy. On the other hand, complex carbs are carbs that are made of up three or more sugar molecules that are strung in long complex chains. Complex carbs turn into glucose which is used by the body as energy. In bread there are complex carbs, many of them. Since starch is used in bread, it has complex carbs.
Since we have talked about both proteins and carbs, this pie chart shows you the percentage of proteins and carbs in bread. In the graph, the majority of bread is made up of carbs, and runner up is fats, and lastly proteins. If you refer back to the nutrition label above, it shows that there are not many grams of protein in breads, therefore not being a good source of protein. However, it can be a good source for carbs and somewhat fats.
Starches Most people who make bread know about starch. Starch is a complex carb which comes from a plant orgin. It can come from wheat, rice, corn, beans, potatoes, and other vegetables. A subtance called amylase converts starch into maltose and then maltase in yeast converts it to glucose.
This graph shows that wheat, being used in breads, is in the top 3 of needing high amounts of starch production. Also, the graph shows that 4,100,000 crops needed to be harvested just for wheat products along, but when making bread, wheat is a huge contributor. This just comes to show that starch gets used a lot in bread and many other things too.
What do carbohydrates do? Carbohydrates provide energy for the body. Since bread has alot of carbs, bread is a option for energy. The carbohydrate source in bread is are comples carbohydrates.
